In the realm of food additives, it acts as a thickener and emulsifier. Particularly in soya milks, gellan gum plays a crucial role in maintaining the suspension of soy protein within the milk.

Functions and Applications:

Gellan gum plays a pivotal role in the food industry, serving as an anti-settling agent, thickener, stabilizer, or structural component in prepared foods. In minimal amounts, it functions as an anti-settling agent in liquids, imparting only a subtle increase in viscosity. This allows for the even distribution of ingredients such as cocoa in chocolate milks or fortifying agents like calcium or fiber in various beverages. Currently, gellan gum is gradually replacing the use of agar agar and carrageenan. It finds application in pet food, candy, dairy products, jams, and flour-based products.
